Pad Se Ew Noodles

 

The key to a delicious pad se ew is moving quickly to get a nice char to the noodles.

This noodle dish is always a hit with many people. It is super flavorful, simple, and has a nice balance of sweet and savory flavors.

Who would have known how EASY it is to make. The key ingredients in this dish are the soy sauces. I use two different types. I use a sweet dark soy sauce and a lighter almost semi salty tart seasoning soy sauce.

What makes this dish better is using fresh rice noodles. I usually go to my local market and pick it up the same day that I know I am craving for this dish. Or, you can buy the noodles one day in advance if you are already at the market.

The brand of rice noodles that I like to use varies but you will find them in a clear package with various sizes.

The key to a delicious pad se ew is seasoning the noodles ahead of time. I like to season my noodles so that it has a nice rich dark color prior to tossing it into the wok with the crisp gai lan and protein of choice.

Once everything is tossed into the wok it is all about moving fast and ensuring that you do not allow the noodles to soak up the liquid too much or it will break apart and become soggy.

I cook this dish on the highest heat possible. I understand that not everyone has a wok, you can achieve this in a skillet as well. You just have to move quickly and par cook your protein, veggie, and egg in the wok or skillet prior to tossing in the noodles.

Once it is ready to whip up, start tossing the ingredients together and enjoy! it is so simple and delicious!

I like to buy wide rice noodles that are fresh. You can find these at your local Asian Market. If you can't you can use the dehydrated noodles and they will work just fine.
