Crispy Garlic Beef Broccoli

This dish is a popular dish and common in Chinese restaurants. There are so many variations of this dish. However, my version is super simple and captures the flavors of a delicious classic stir fry.

This dish has history in a sense that western broccoli was used to replace “gai lan” which is the Chinese broccoli. The regular broccoli was used to replace gai lan because it was more accessible and easier to find.

Gai lan has a slightly mustard spice to the vegetable which I think is more flavorful and aromatic than regular broccoli. However, this dish is tasty and super good none the less.

To capture the best flavors of this dish it is important to tenderize the meat. I like to marinate it in cornstarch and a little bit of baking soda for at least an hour for best results.

I add my signature garlic galangal oil into the mix for a delicious aroma and depth of flavor.

If you are in a rush, 30 minutes would work fine too. I do not skip this step because it makes all the difference between a tender stir fry or a tough stir fry. Give it a try, I am sure you will like the results.

This stir fry is very simple and absolutely delicious. We focus on the best aromatics in this dish which is the garlic and black pepper. I feel like these two aromatics are the yin and yang that make this dish. The pepper gives a subtle spice and the garlic gives a nutty and umami aroma to the dish.

For this dish, for it to be successful it is all about the method in which you cook the beef and broccoli. You have to be careful not to overcook the beef and the broccoli or else the beef can become tough and the broccoli can become to tender and mushy.

I like to par cook my beef and give it a nice char and set it aside before I toss it back in the the mixture. My order is: 1. cook the beef in oil, parcook, and remove. 2. add the sauce and let reduce/thicken 3. toss in the broccoli, stir fry. 4. add in the beef, give it a toss!
